The new pizzeria Forbici is set to land in Manchester shortly with a new twist on Neapolitan pizza. And some of the first limited-edition guest pizzas will feature Lancashire Hotpot and Black Pudding toppings.
A series of inventive bold pizzas will be available for the first six weeks following Forbici’s opening on Cross Street.
The signature ‘Forbici formula’ will feature high-rise pizzas which nod to Neapolitan tradition. Think airy bida dough, proofed for 12 hours at 24°c to achieve the perfect pH of 5.0, made fresh daily with flour from Molini Pizzuti. The pizzas are then served in quarters, cut with scissors, ready to fold and savour.
And whilst the restaurant will, of course, include favourites such as Margherita with San Marzano tomato, fior di latte, and fresh basil; the Americana with pepperoni; and the Calabrese, layered with stracciatella, spicy ‘nduja, and basil, during the opening they are adding a touch of northern flavours to the menu. On top fo the Lancashire hotpot inspired pizza and black pudding pizza they are expected to announce more collaborations and locally inspired creations.
To complement its signature pizzas, Forbici has partnered with Amarcord, one of Italy’s pioneering independent breweries, to bring a new wave of craft beer to Manchester. Designed to enhance every bite, Amarcord’s crisp, refreshing brews are the perfect pairing. Keeping things local, Shindigger’s Manchester lager adds a Northern touch to the drinks menu. For those opting for a soft drink, classic Italian sodas like Polara Limonata and Lurisia Chinotto are also available.
